Ingredients

  • 1.5 lbs chicken thighs, boneless/skinless, sliced into thin bite-sized strips
  • The Nightshade-Free Bulgogi Marinade:
  • 1/2 medium Asian pear (or sweet crisp apple like Gala/Fuji), finely grated or blended into a purée
  • 1/4 cup coconut aminos (or low-sodium tamari)
  • 1 tbsp toasted sesame oil
  • 1 tbsp maple syrup or raw honey (optional, for authentic glaze)
  • 4 cloves garlic, finely minced or grated
  • 1.5 tbsp fresh ginger, finely grated
  • 3 scallions (green onions), chopped (keep whites for the marinade, greens for finishing)
  • 1 tbsp toasted sesame seeds
  • Pinch of freshly cracked black pepper (optional, skip if strictly avoiding all peppercorns)

Preparation

  1. 1

Marinate the Chicken: In a bowl, whisk together the grated Asian pear, coconut aminos, sesame oil, garlic, ginger, scallion whites, maple syrup, and sesame seeds. Add the sliced chicken thighs and toss until coated. Cover and refrigerate for at least 30–60 minutes (up to 4–6 hours; the pear's natural enzymes tenderise the chicken quickly).

  2. 2

*Air Fryer Method (Quick & Easy Cleanup): Preheat to 400°F (200°C). Remove chicken from the marinade, letting excess liquid drip off so it caramelises rather than steams. Arrange in a single layer in the basket/tray using the middle rack position. Cook for 10–12 minutes, shaking or flipping halfway through, until edges are caramelised and the internal temperature reaches 165°F.

  3. 3

*Standard Conventional Oven (Bake / Broil): Setting: Bake (with an optional Broil finish). Temperature: 425°F (220°C). Setup: Rimmed baking sheet lined with parchment paper or foil. Time: 12–15 minutes total. Instructions: Spread the chicken out in a single layer without overcrowding so it roasts rather than steams. Bake for 10–12 minutes, then switch the oven to Broil (High) for the final 2–3 minutes to get those classic Korean BBQ caramelised edges.

  4. 4

*Stovetop Method (High-Heat Searing): Heat a wide skillet or wok over medium-high heat with a light drizzle of high-smoke-point oil (like avocado oil). Add the chicken in a single layer (work in two batches if necessary to avoid crowding the pan). Sear undisturbed for 3–4 minutes to get deep golden browning, then flip and toss until cooked through (another 3–4 minutes).

  5. 5

Finish & Serve: Garnish with the reserved sliced scallion greens and extra toasted sesame seeds. Pairing idea: Serve over steamed jasmine or purple rice with crisp butter lettuce leaves for wrapping, paired with a cool cucumber salad tossed in rice vinegar and sesame oil.

Clinical Adjustments & Swaps

Make It A Light Option

Adapt The Joint Stack Bulgogi into a lean, lighter version without sacrificing flavour or functional benefits. Use sliced chicken breast in an oil-lightened Asian pear and ginger glaze, served in crisp lettuce wraps — high-protein, low-density anti-inflammatory fuel for joint ease and steady metabolic balance.

  • Swap the Protein: Use boneless, skinless chicken breast sliced thinly across the grain instead of thighs.
  • Lighten the Glaze: Cut the toasted sesame oil in half (use 1.5 tsp) and omit the maple syrup entirely — the natural sugars in the grated Asian pear provide plenty of glaze and caramelisation.
  • Bulk Up with Veggies: Toss sliced shiitake mushrooms or shredded green cabbage directly into the marinade with the chicken to double the portion volume without adding dense calories.
  • Serve 'Ssäm' Style: Skip the grain base and serve spooned into crisp butter lettuce cups or over a 50/50 mix of riced cauliflower and purple rice.
