The Origin

Why this kitchen exists

After over two decades studying the crossroads of traditional cooking and nutritional science, food stopped being just comfort or culture for me—it became an urgent necessity. When chronic inflammatory and immune challenges entered my family's everyday life, standard dietary advice proved frustratingly hollow. Living with conditions like rheumatoid arthritis, cachexia, ulcerative colitis, gastritis, or mast cell activation syndrome, forces you into an exhausting paradox: you desperately need nourishment, but creating a safe meal becomes painfully difficult, appetite might be fragile, and grocery aisles are landmines. Even products labeled “healthy” or “gluten-free” routinely swap one allergen for reactive seed oils and filler gums. I built The Joint Stack Fusion to end the trade-off between biological safety and real, restorative pleasure at the table. Our culinary approach—Functional Fusion—draws on traditional cooking wisdom from around the world to achieve two non-negotiable goals: Calming systemic inflammation through deliberate, trigger-free ingredient selection, and protecting caloric and nutrient density so bodies working in overdrive actually stay fueled. This site draws from all of them. Rather than prescribing a single protocol, we look at what the science says about specific compounds — curcumin, omega-3s, polyphenols, probiotics — and find the most delicious, culturally rich ways to get them onto your plate.

My journey into the heart of functional nutrition began in the late 1970s at Rosenvilde in Norway. Graduating from their rigorous program in nutrition, cooking, and domestic science gave me a solid foundation in the time-honored Norwegian traditions of managing a healthy, thriving home.

With those classic principles as my anchor, I carried my skills across the Atlantic to New York City, securing a position as a family assistant on the Upper East Side of Manhattan. In a high-demand household, my primary responsibility was managing the children's nutrition, dietary restrictions, and daily routines alongside their school and social calendars. I loved executing my training under elevated stakes; it challenged the traditional domestic-science curriculum in its most rigorous form and proved its relevance. These two worlds were simply different registers of the same discipline, allowing me to navigate the bespoke, discretion-heavy culture of private service with ease.

That interplay between classic domestic science and high-stakes service shaped my entire professional philosophy. Alongside the polished logistics of luxury service, I always looked for moments where rigid protocol could dissolve into something more human and alive. To ground this work further, I completed specialized coursework in infant care and early childhood development, focusing on the fundamental physiological and emotional needs that form the baseline of lifelong health.

Returning to Norway, I transitioned from private service to clinical practice, earning my Bachelor's Degree as a Vernepleier (Social Educator). This multidisciplinary Norwegian degree is an intensive synthesis of key fields: Medical Science & Nursing (understanding anatomy, physiology, and pharmacology); Psychology & Pedagogy (navigating behavioral health, cognition, and how we learn); Environmental Therapy — Miljøterapi (structuring physical spaces and daily routines to foster neurological and emotional healing); and Law & Social Science (navigating the societal frameworks that support human well-being).

Twenty-four years ago, I brought this whole-person clinical perspective to Los Angeles. Working with a non-profit agency, I found daily inspiration — and profound purpose — among 140 children and youth navigating crises.

That was where The Waffle Effect was born. Every Friday after school, we began making Norwegian heart-shaped waffles — what quickly became known as our "power hearts." In clinical terms, it was environmental therapy; in human terms, it was pure comfort. The magic was never just the recipe, but the atmosphere: the aroma of cardamom signaling safety, the warmth of the plate, and the intentional creation of koselig — a deep, soul-level coziness where the nervous system can reset and healing can begin.
