Ingredients

  • — Base & Bulk —
  • 1.5 cups cooked purple rice (black rice)
  • 1.5 cups finely shredded red cabbage
  • — Binder & Resilience Matrix —
  • 2 tbsp chia seeds, soaked in 6 tbsp warm bone broth until a thick gel forms
  • 2 scoops (approx. 20g) unflavored collagen peptides
  • — Calming Aromatics & Flavor Engine —
  • 1 tbsp fresh ginger, finely grated
  • 1 tbsp fresh dill, finely chopped (plus extra sprigs for garnish)
  • 1 tsp ground fennel seed (or freshly crushed fennel seed)
  • 1.5 tbsp coconut aminos
  • 1 tsp Manuka honey
  • 1/2 tsp fine sea salt & cracked black pepper
  • — Cooking Fat —
  • 1–2 tbsp avocado oil or extra-virgin olive oil for gentle searing

Method

  1. 1

Hydrate the Binders: In a small bowl, whisk together the soaked chia seed gel, collagen peptides, coconut aminos, and Manuka honey until smoothly combined.

  2. 2

Soften the Slaw: In a pan over medium-low heat with a splash of bone broth, lightly wilt the finely shredded red cabbage for 3–4 minutes until tender and pliable. Remove from heat.

  3. 3

Combine the Mixture: In a large bowl, lightly mash the cooked purple rice with a fork to break down some of the grains. Fold in the wilted cabbage, fresh dill, grated ginger, fennel seed, salt, pepper, and the chia-collagen binder mixture. Mix thoroughly until the mixture holds together when pressed.

  4. 4

Form the Patties: Shape into compact, round patties (about 1/2-inch thick). If needed, chill in the refrigerator for 15–20 minutes to set firmly before cooking.

  5. 5

Pan-Sear: Heat the oil in a skillet over medium heat. Sear the patties gently for 3–4 minutes per side until heated through and lightly crisp on the exterior without burning.

  6. 6

Serve: Plate warm alongside steamed tender chayote with dill and silky mashed rutabaga, drizzled with a light reduction sauce.

The Modular Rebuild Layer (High-Density Option)

When extra calories and sustained energy are needed — such as during flare recovery or rebuilding lost weight — the density is dialed up through the add-ons:

  • Searing in generous avocado oil or grass-fed ghee.
  • Serving with rich reduction sauce and butter over the mashed rutabaga.
  • Drizzling extra virgin olive oil or pairing with avocado.

In short: the core patty was designed to be gentle and easily tolerated, while the accompaniments allow it to shift effortlessly between a light, calming meal and a high-calorie restorative plate.
