Anabolic muscle-sparing pasture-raised chicken thighs paired with joint-calming botanicals, anthocyanin-rich purple rice, and a mineral-dense tahini drizzle.
Ingredients
- — The Chicken & Marinade Engine —
- 1.5 lbs pasture-raised chicken thighs (skin-on for cachexia density, or boneless/skinless)
- 2 tbsp fresh ginger, finely grated (or 1 heaping tbsp Ginger-Garlic Base)
- 1 tbsp fresh garlic, minced or pressed
- 2 tbsp raw honey (or Manuka honey)
- 2 tbsp coconut aminos (soy-free, low-sodium umami)
- 1 tbsp toasted sesame oil
- 1 tbsp avocado oil or grass-fed ghee (for high-heat searing)
- 1/2 tsp fine sea salt
- — The Purple Rice & Veggie Base —
- 1 cup purple/black rice (Chak-hao / Forbidden rice), thoroughly rinsed
- 1.75 cups rich chicken bone broth (or pressure-cooked stock)
- 4 heads baby bok choy, halved lengthwise
- Pinch of fine sea salt
- — The Finishing Emulsion (Lemon-Tahini Drizzle) —
- 2 tbsp pure sesame tahini (100% sesame, seed-oil free)
- 1–2 tbsp warm bone broth or warm water
- 1 tsp fresh lemon juice (omit for acute gastritis/flare)
- 1 tsp raw honey
- Pinch of sea salt
- Garnish: toasted sesame seeds and thinly sliced green onions
Preparation
- 1
Simmer the Purple Rice: In a medium saucepan, combine rinsed purple rice, chicken bone broth, and sea salt. Bring to a boil, cover tightly, reduce heat to low, and simmer for 30–35 minutes until liquid is absorbed. Keep covered off heat for 10 minutes to steam.
- 2
Whisk the Marinade & Coat: In a bowl, whisk grated ginger, minced garlic, raw honey, coconut aminos, toasted sesame oil, and sea salt. Toss chicken thighs thoroughly to coat; marinate at room temperature for 15–20 minutes.
- 3
Cook the Chicken (Choose Your Method) — Skillet Method: Heat avocado oil or ghee in a heavy skillet over medium-high heat. Sear thighs 4–5 minutes per side until golden. Pour remaining marinade into the pan, reduce heat to low, cover, and simmer for 5–7 minutes (internal temp 165°F / 74°C) until glazed. — Gourmia Air Fryer Method: Arrange thighs skin-side up on the top rack. Air-fry at 375°F (190°C) for 15–18 minutes, brushing extra glaze over the skin during the final 3 minutes until bubbling. — Conventional Oven Method: Preheat oven to 400°F (200°C). Place thighs skin-side up on a parchment- or foil-lined baking sheet. Roast for 22–25 minutes until cooked through (internal temp 165°F / 74°C), brushing with extra glaze during the last 5 minutes.
- 4
Flash-Cook Bok Choy: Toss halved baby bok choy with a drop of sesame oil and sea salt. Flash-steam in a skillet for 4–5 minutes, or roast on the bottom Gourmia tray during the last 6–8 minutes until stems are tender-crisp.
- 5
Emulsify the Tahini Drizzle: In a small bowl, whisk tahini with lemon juice, honey, and salt. Slowly drizzle in warm bone broth a splash at a time until it forms a pourable ribbon.
- 6
Assemble & Plate: Spoon warm bone-broth purple rice into shallow bowls alongside bok choy. Slice glazed chicken thighs on top, spoon pan glaze over, drizzle with Lemon-Tahini sauce, and scatter with toasted sesame seeds and green onions.
Clinical Adjustments & Swaps
Make It A Light Option
MAKE IT LIGHT & LEAN (WEIGHT-NEUTRAL OPTION):
- Use skinless chicken breast or wild-caught white fish (cod or sole) steamed in a parchment pocket for 8–10 minutes.
- Reduce tahini drizzle to 1 tablespoon thinned with bone broth.
Trifecta Flare Safe — UC / Gastritis / MCAS
- Swap raw garlic for pure ginger infusion.
- Omit lemon juice in tahini drizzle.
- Ensure chicken is fresh (not aged) and freeze leftover portions immediately to prevent histamine buildup.
Modular Rebuild — Cachexia / Anabolic Boost
Keep chicken skin intact, sear in grass-fed ghee, and increase tahini drizzle to 3 tablespoons for added caloric fuel without seed oils.
- Add roasted chayote tossed with crushed pistachios for an extra 150+ calories.
Cholesterol-Conscious Swap: Use skinless poultry, sear exclusively in extra-virgin olive oil or avocado oil, and rely on sesame tahini for heart-healthy plant lipids.
